Preparation Clean the zucchini flowers carefully removing the stem and the pistil inside them. Cut the mozzarella cheese into cubes. Wash the anchovy fillets under running water.
Widen the flowers slightly and stuff them with the Mozzarella cheese and the anchovy fillets. Then close them them delicately. Prepare a batter. Beat the egg, add the flour and a little salt. Add enough water so that the batter runs off the fork well.
Put the oil in a pan and when it is hot, dip the zucchini flowers in the batter and fry on both sides. Serve hot.
