Preparation Clean the truffle with a clean cloth and slice it thinly.

Put the truffle slices into a glass bottle (either new or sterilized) with a wide mouth so that you can extract the truffle slices without breaking them. Cover with extra virgin olive oil.

Close the bottle hermetically and let it rest for at least 2 weeks, before eating them
 
The Chef's tips This aromatic oil is well suited to flavour roast meats and pasta dishes. You can also use the truffle remains to make a number of tasty recipes such as flavouring a green salad and adding some pieces of Gorgonzola cheese.
 
Curiosity Truffles are very expensive however one consolation is that a little goes a long way.
