Preparation First of all prepare a small soft ball by melting the yeast in a little warm water and 2 tablespoons of flour. Knead well and draw a cross on the top. Let it rise in a bowl sprinkled with flour and covered with a kitchen cloth. Put the bowl in a warm place and leave it there until it is double the size.
Put the soft wheat flour onto a board and make a well in the middle. Add some salt and warm water (about 2 dl. a little less than a glass) a little at a time. Then knead until you have a dough that is not too hard. Add your first soft ball and knead well and energetically for about 20 minutes. You should be able to see a few bubbles on the top (it should be taking in air) and there should be a few small holes inside.

Bake your bread in a preheated oven at 200-250°C for about an hour for loaves weighing 1 kilo. For the above recipe it would be about half an hour. Once the bread is ready, let it cool in a cool but not cold place. The Chef's tips If you are baking in an electric oven, turn the loaf over when it is half way through baking as this type of oven tends to leave the under side of the loaf a little raw.
