Preparation Put the flour onto a pastry board and with your hands make a well in the middle and add the eggs and salt. Start by mixing in the flour with the eggs a little at a time starting form the inside of the well. Work the mixture for about 10 minutes.

When you have finished, make a round ball and wrap it in a serviette and let it rest for a few minutes. You will need a rolling pin to roll out the dough and put plenty of flour on the board and the pin. Pull out the dough with your hands and then start rolling it out until it is round and uniform which you will then cut according to the form you want.

As an alternative, you can use the a pasta machine or the various cutters to make ravioli and other kinds of filled pasta dishes.
 
The Chef's tips Add a couple of spoons of extra virgin olive oil to make the dough softer. To add colour and flavour to your noodles, you can use carrots or spinach.
 
Curiosity If you have 100 grams of egg noodles flavoured with butter and cheese, you can then have a salad and fruit. This is not fattening and you will be getting the right amount of calories.
