Preparation Prepare the syrup by boiling the sugar together with the water for 5 minutes. Then slice the lemon rind finely and add. Let it cool.
Let the syrup rest for 2 hours then add the lemon juice and the limoncello. Pass it all through a strainer. Whip the egg white until it is stiff and then add.
Place the mixture in a dish in the freezer and let it freeze. When it becomes solid, take it out and whisk it in the blender until it is creamy. Serve straight away.
