Easter fare

This year the winter has been the coldest ever and it is hard to believe that spring and thus Easter is drawing close. Catastrophes have followed one after the other without a break. Hoping that the rain and storms let up soon, let us prepare for a peaceful and productive Easter. After having preferred hot, tasty soups and meats, let us turn our thoughts to lighter fare more suitable to the spring when the weather should be milder.

Easter is synonymous with chocolate and cakes but this is also a good opportunity to indulge in interesting, crisp salads – not to be underestimated. There are a number of potages that go down very well. But here in Italy the traditional second course is Roast Lamb and Potatoes, to be eaten from north to south, east to west. Take a look at the recipes below for your Easter table.
